Shabu shabu is one of Japan’s most treasured communal dining traditions, and its origins reflect the same spirit of warmth and togetherness that defines the experience today. The dish traces its roots to Chinese hot pot cooking, which made its way to Japan in the early twentieth century and was refined over the following decades into a distinctly Japanese format. The name itself comes from the Japanese word for the swishing sound of thinly sliced meat being drawn through simmering broth — a small, meditative motion that captures something essential about what shabu shabu really is.

How It Works

At Osaka Japanese Cuisine, we bring authentic shabu shabu to the Memphis area exclusively at our Cordova location. A pot of simmering broth is set at your table. You select from a carefully curated menu of thinly sliced proteins and fresh vegetables, cooking them directly in the broth at whatever pace suits you. Each bite is finished in a dipping sauce — savory ponzu, rich sesame, or your own combination — and the result is a meal that is light, clean, and deeply satisfying.
